Crafted by the De Villiers family in the beautiful seaside town of Hermanus,
DV Artisan Chocolate is the only ‘Bean to Bar’ chocolate maker in South
Africa.
Practicing the ancient art of chocolate making, DV Artisan Chocolate combine age-old
stone grinding techniques with the precision of modern technology, using
custom designed and built machinery and equipment. In pursuit of
only the finest cacao beans, they relentlessly searched all corners of the
globe. More than 30 different origin beans were painstakingly tested over
an 18 month period before they ultimately arrived at choice of 5 origins,
selected for their rich diversity of chocolate flavours: Trinidad, Venezuela
- Rio Caribe, Venezuela - Caracas, Sao Tome and Madagascar.
Chocolate
making is a slow and lengthy process, taking up to 6 days, a procedure
which cannot be rushed at any stage. Paying careful attention to the unique
‘personalities’ of each chosen varieties and origins, beans
are roasted, refined and conched on a micro batch scale in the factory,
under a vigilant watch. Cacao is extremely rich in taste and aroma,
containing in excess of 600 identified flavour components. Their quest is
to reveal these inherent flavours within the cacao bean, without the use
of any added flavourings or emulsifiers. The result is a sophisticated
and flavourful, yet remarkably pure chocolate, not to be found anywhere
else in the world.
